Summer Confetti Salad
I’ve never been a beet fan. Growing up, I was exposed to plenty of beets, but wasn’t sure if they were canned or fresh. So I decided to try a new recipe. I’m excited to say that this one turned out great. The flavor of the freshly marinated beets was complimented by the grapefruit citrus. A perfect combination of flavors, this salad is not only healthy but delicious.
- arugula or other baby greens
- cooked red quinoa with vegetable broth (I use the rice cooker for easy preparation)
- mashed avocado with tarragon
- pink grapefruit
- beets boiled and marinated in sherry vinegar
- top with crushed pistachio nuts
