Roasted Garlic

Learning how easy it is to make roasted garlic may have just changed my life. I’ve paid tons of money to fancy restaurants all over the world buying roasted garlic and absolutely love it. I had no idea how easy it was to duplicate that special flavor at home. I was also happy to find great news about garlic on the American Institute for Cancer Research website – as one of a family of foods that fight cancer. The aroma on this one will make your entire house smell like garlic. I absolutely love that, but be forewarned!

What you’ll need

  • 1-2 bulbs garlic
  • olive oil

How to make it

Preheat the oven to 350. Heating up an entire oven does seem a bit ridiculous for a teeny bulb of garlic. I heated mine while browing some crostinis. If you’re cooking something else and have a spare bulb of garlic to roast, throw it in. You won’t regret having the option of roasted garlic in your meal or available to snack on afterward. It won’t last more than a day or two in my fridge.

Cut the top off of the bulb of garlic, trying to maintain as much of the outer garlic shell around the individual cloves as possible.  Slowly drip olive oil over the exposed garlic bulb. Wrap in aluminum foil securely with the flat side down. Roast in oven for 20-30 minutes.

Garlic is ready when soft to the touch.
