Green Smoothies

Spinach – it’s now for breakfast!

I tried my first green smoothie this morning. Not sure why I’ve never done it before. Never thought about it. That’s why I love exploring healthy food.

Even if I don’t follow a raw diet, I can introduce a few green smoothies to my diet each week and be much healthier. And they’re quite tasty.  A word of caution – if you don’t add enough fruit or liquid to your smoothie recipe, it will be very thick and you’ll be more likely eating your smoothie than drinking it. Still tastes good, but doesn’t go down as smooth.

What you need

  • a few full handfuls of fresh spinach (or other leafy greens)
  • a couple pieces of fruit – I used a  nectarine and a banana
  • 1-2 tbsp apple juice concentrate
  • 1 cup water

How to make it

Put all ingredients in blender or food processor, pulse and blend until rich and frothy and ready to drink.

And finally, Marina’s favorite:

  • 2 bananas (the riper the sweeter)
  • 1 cup of blueberries (fresh is best)
  • as much fresh spinach as will fit in blender
  • a cup of purified water (just to get the blender moving) *

*You may have to use a stick to get it moving. pulsing will help get it started as well.

You can add nut butter for a boost of protein/fat or add honey or agave nectar if you want it a little sweeter. Naturally if you add honey, it won’t be vegan :-)

    Congrats on your 1st Green Smoothie. That's AWESOME!!!

    I'm "eating" a very thick one right now, it's chewable because I didn't put lots of water in it. It has organic kale, apples, lime, and celery. So nutritious!
