A sweet and savory salad, this remains one of my favorites.
baby greens – arugula, topped with
silken tofu – crumbled, rolled in and sauteed with
almonds – powdered with coffee grinder, sauteed in
coconut oil, then topped with
strawberries – sliced
blueberries
coconut flakes – toasted (optional) and
orange balsamic vinaigrette:
orange juice concentrate
balsamic vinegar
olive oil
water
agave nectar
